Garbonzo Poppers
My husband unaffectionately refers to chickpeas as "ass beans". If you're lucky, your kid will warm up to these more than he would. If you don't have italian seasoning, just replace it with some basil and oregano.
1 15.5 ounce can garbanzo beans, drained and rinsed
1 teaspoon olive oil
1 1/2 teaspoon italian seasoning
Pinch salt
Preheat oven to 350 F.
Combine all ingredients in small bowl and stir to coat evenly. Transfer to jelly roll pan (baking sheet with rimmed edges so the beans don't roll away).
Bake for 20-25 minutes or until beans are slightly dry and golden on the outside.
Cool on pan before serving or store in refrigerator.
